Bonjour! This week's destination is France! Along with Chef Jessica Roberts, we'll make a French-inspired meal in real-time. Teens will learn to make a Bechamel sauce, one of the five mother sauces in classic French cuisine, and turn it into a creamy Panko-topped Macaroni & Cheese. We'll pair that with a Kale Salad with Toasted Pepitas and lemon garlic vinaigrette and Apple-Cinnamon Crepes. Bon Apetit!

What you will need:
Ingredients (serve 4):
- 680 grams old cheddar (good quality!)
- ¼ cup grated Parmesan (fresh)
- 5 cups whole milk (3%)
- 1 cup unsalted butter
- 4 eggs
- 1 bunch kale (not purple and green decorative kale)
- 4 apples (Royal Gala or Granny Smith)
- 1 clove garlic
- 2 lemons
- 1 cup panko bread crumbs
- 1 lb (454 grams) macaroni
- 1/3 cup extra virgin olive oil
- ¼ cup pepitas (hulled pumpkin seeds)
- 2 ¼ cups flour
- 2 tbsp brown sugar
- ½ tsp cinnamon
- 1 ½ tsp dry mustard
- Freshly ground pepper
- Salt

- Large pot (for cooking pasta)
- Medium saucepan
- Large non-stick skillet
- 9x13 glass baking dish
- Cheese grater
- Cutting board
- Chef knife
- Paring knife
- Measuring cups & spoons
- Liquid measuring cup

- Medium mixing bowl
- 3 small mixing bowls
- Large colander/strainer
- Whisk
- Rubber Spatula
- Thin spatula for flipping crepes (safe for non-stick skillet)
- Vegetable peeler
- Citrus juicer or reamer
- Small mesh strainer for straining lemon juice (Optional)
